Ukrainian borscht is included in the list of intangible heritage of UNESCO.



Ukrainian polar explorers who are in Antarctica said that they also cook borscht and shared its recipe. The recipe was posted on the Facebook page of the National Antarctic Science Center.

In particular, the chef Oleg Kurus gave some advice on how to cook the famous Ukrainian dish in the best possible way.

Kurus said that to make borscht, he takes white beans and soaks the beans overnight before preparing the dish. Bean broth is always boiled separately and added to borscht when it is almost ready.

Beets for borscht, as well as bell peppers, he advises to bake.

According to the cook, there must be sourness in borscht. To do this, he adds apple cider vinegar, but, according to him, you can use lemon juice or yogurt.

An indispensable ingredient of the Antarctic borscht is smoked underperitone, - added the cook.

Kurus recommends donuts, lard and sour cream to serve with borscht.

By the way, there is no ready-made sour cream at Vernadsky, but it can be prepared from milk powder, water and lactic acid bacteria, the report says.

He added that in total there are more than 30 borscht recipes at the station, but not all of them can be sold in Antarctica. Nevertheless, Oleg prepares a native Ukrainian dish for winterers every week, each time trying to diversify it. For example, recently borscht was with meatballs.

Polar explorers stressed that they were very happy when UNESCO included the culture of Ukrainian borscht in the list of intangible heritage.
