The US has launched yeast into space and brewed ale from it
Rhinegeist brewery from Cincinnati, USA is preparing to introduce this autumn an unusual drink - Apex Apple Ale, brewed from yeast that students from the University of Cincinnati launched into the stratosphere .
Yeast has risen to an altitude of 10,245 feet (more than 3km) aboard a Rising Star rocket built by a team of rocket engineering students. The project was part of the International Rocket Engineering Competition in Texas, where 143 teams from 22 countries participated.
The 27kg rocket, weighing almost 3.5 metres long, took off at 750mph (more than 1,200km/h) and reached its maximum altitude in less than four seconds. The brake parachute and main canopy were then opened according to a preset programme, ensuring a safe return.
The idea to put beer yeast in the payload came from the students when they approached the brewery with a partnership proposal. Since the competition requires each rocket to carry a minimum payload, the guys decided to test how vibration and temperature loads would affect the dry yeast.
"We added sensors to record how the launch affects them," explains Matt Boller, one of the team members and a student in the Department of Aerospace Engineering.
Rhinegeist Brewery microbiologist and technologist Nick Ketcham supported the idea with enthusiasm:
"The process of brewing beer is an art based on science. I liked the idea and thought, why not try brewing ale with yeast that has 'been to space'?"
The result - Apex Apple Ale - is an ale with a light apple aftertaste, not too sweet but perfect for the autumn season. A total of 16 kegs have been brewed. The drink will be available at Rhinegeist's signature bar.
