Salad with corn

Ingredients:

  • 1 can of sweet corn (strained)
  • 1 cucumber (sliced)
  • 1 red pepper (chopped)
  • 1 small red onion (finely chopped)
  • 2 tablespoons finely chopped fresh coriander
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions:

  1. Mix all ingredients in a bowl.
  2. Mix well and salt and pepper to taste.
  3. Serve chilled.

Cream of Corn Soup

Ingredients:

  • 1 can of sweet corn (strained)
  • 1 small onion (chopped)
  • 1 garlic clove (chopped)
  • 2 cups chicken or vegetable broth
  • 1/2 cup double cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Fry onion and garlic in olive oil until soft.
  2. Add the corn and broth, bring to a boil.
  3. Cook over a low heat for 10 minutes, then whisk to a purée.
  4. Pour in the cream, salt and pepper and bring to the boil.
  5. Serve hot.

Flatbreads with Corn

Ingredients:

  • 1 can of sweet corn (strained)
  • 1 egg
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 2 green onions (chopped)
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Mix all ingredients except the oil in a bowl until you have a dough.
  2. Heat the oil in a frying pan and spoon out the batter.
  3. Fry until crust is golden, then remove to a paper towel.
  4. Serve with sauce of choice.

Salsa with Corn

Ingredients:

  • 1 can of sweet corn (strained)
  • 1 avocado (sliced)
  • 1 tomato (chopped)
  • 1 jalapeño (finely chopped)
  • 2 tablespoons finely chopped fresh coriander
  • 1 lime (strained)
  • Salt to taste

Instructions:

  1. Mix all ingredients in a bowl.
  2. Mix well and season with salt.
  3. Serve with chips or as a topping for stir fry.

Ingredients:

  • 1 can of sweet corn (strained)
  • 1 can of tuna (strained)
  • 1/2 cup mayonnaise (optional)
  • 2 stalks of celery (chopped)
